Tofu and Beef(2 serving)

Ingredients
- 1 block firm tofu
- 200g thinly-cut beef
- 1 leek
- 2 tbsp(30ml) sake
- 150ml dried-bonito soup stock⇒recipe<
- 1 tsp sugar
- 1 tbsp soy sauce
- 1/2 tbsp oil
Directions
- Cut the tofu and set in a strainer to drain for 10 minutes.
- Chop the white part of the leek into 3cm lengths and chop the green part of the leek into small pieces.
- Heat the oil in a pan and saute the beef.When the meat begins to change color,add the leek.
- When the leek is browned,season with the sake,dried-bonito soup stock,sugar,and soy sauce in the order.
- When it starts to boil,turn to medium-low heat and carefully remove the scum.
- Add the tofu and simmer for 15 minutes,stirring occasionally.When the liquid has evaporated,sprinkle in the green part of leek.
